Pumpkin Muffin Cookies
Ingredients
- 1 cup white sugar
- 1 egg
- 1 cup shortening
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 can pumpkin
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together sugar, egg, shortening, and vanilla. Sift together flour, baking soda, baking powder, salt, and cinnamon; stir into the creamed mixture. Stir in the pumpkin. Drop dough by teaspoonfuls onto the prepared cookie sheets.
- Bake 15 minutes in the preheated oven.
Ok...just left mine in for 25 minutes by accident...still tasty.
